西班牙食藝星廚Alejandro Serrano(亞歷山卓塞拉諾) 出生於西班牙埃布羅河畔米蘭達,家族以經營餐廳為主,在餐飲世家中,意識到對美食的熱情,並懷抱決心成為主廚的志願。先後在三星主廚 Eneko Atxa (安尼柯艾夏) Azurmendi餐廳及Dabiz Muñoz (大衛·穆諾茲)的DiverXo餐廳習藝,憑著對料理豐沛創意與熱情,使得Alejandro Serrano成為西班牙最亮眼的閃耀之星。年輕、富有創造力的Alejandro Serrano非常擅長海鮮料理,更善用融合創新與傳統貫穿的手法,巧妙融合海味與山珍,充份展現食藝美學,幻化出道道令人愉悅與激賞的盛宴,為饕客獻上無法忘懷的美味旅程。

顛覆西班牙美食離不開燒烤薰陶,食藝星廚Alejandro Serrano (亞歷山卓․塞拉諾) 料理則以海洋來演繹。出生於鄰近河畔的城鎮,Alejandro Serrano憶起兒時與祖父頻繁進出漁村,耳濡目染下,所見的海景,化為鍾情於海的厚愛,讓海鮮成為餐桌上的主角,土地、大海及食物原生風味,透過精湛廚藝完美展演,彷彿海神給予力量,帶來藝術與驚艷的海味珍饈,引領食客重認識海洋,亦被主廚的真誠所感動,喚醒味蕾一次次的觸動。

麵包

西班牙黑橄欖松子法棍

法棍使用老麵糰來替代酵母發酵,將特選麵粉、水、鹽及老麵糰攪拌均勻後,於常溫中基本發酵2小時,再塑型成長條並且置於5度環境下低溫發酵8小時以上,水分子緩緩滲透到於麵糰內層,口感更顯柔軟細緻。同時取風味醇厚、果肉飽滿的黑橄欖與松子一同烘烤10分散發出香氣,再平舖至麵糰上,以上下火230度烘烤16分鐘,龜裂自然且漂亮的法棍麵包表皮酥脆,內層散發出甘甜麥香,鹹香黑橄欖與松子妝點下,濃郁多層次的香氣和食感令人著迷又滿足。

煙燻甜椒洋蔥麵包

PRIME ONE牛排館限定洋蔥麵包,自推出廣受饕客好評,此款麵包最特別之處以洋蔥來取代水,選用蛋白質豐富且延展性高來自日本的凱薩琳麵粉,加入炸至金黃的洋蔥絲與洋蔥與酵母攪拌發酵一小時,並包入煙燻甜椒後整型靜置再發酵1個半小時,使麵糰更加細柔,並放入烤箱以上火150度、底火230度烘烤20分鐘,出爐前刷上一層橄欖油及撒上玫瑰岩鹽,洋蔥辛辣味道轉化成為甜美,香氣在唇齒間留下後韻無窮的美。

西班牙烘蛋

看似簡單且一眼望穿的開胃小點,卻有著高雅優美的複雜變化,美味的前奏準備在美食盛宴上翩翩起舞。外觀看似樸實的西班牙烘蛋又稱之馬鈴薯蛋餅,為西班牙家喻戶曉國民菜色,主廚運用解構再建構概念,取淨白馬鈴薯放入水、鹽、大蒜、橄欖油及鮮奶油一同燉煮至熟透,再將食材打成泥後過篩,並放入65度的氮氣瓶中,呈現出空氣感的輕盈馬鈴薯慕斯。再將另一主角,雞蛋與蛋黃、鮮奶油、橄欖油及鹽巴打勻過篩,入氮氣瓶製成綿密泡沫,妝點在輕盈洋芋慕斯上,整道料理充滿戲劇張力,馥郁香氣與綿密細緻繚繞著幸福,使看似簡單的西班牙烘蛋不再平凡。

鴨高湯與黑啤泡泡

跳脫框架,提高想像空間,利用工序製成風味卓越的高湯,佐上濃烈黑啤酒風味,在舌尖上譜出美妙樂章。主廚取帶有細碎肉的鴨骨,利用烘烤散發出迷人焦香,再將水分與辛辣度兼具的台灣洋蔥、番茄、紅蘿蔔、薑等,經過大火快炒加鹽調味備用。取一鍋水加入醇香紅酒、烤香鴨骨及炒香蔬菜熬煮8小時,費時燉煮下香氣四溢的鴨骨與蔬果鮮甜慢慢滲出,然後再將其過濾取鴨高湯,上方妝點加入略帶苦澀黑啤酒泡泡,滑順而深邃,尾韻回甘衝擊味蕾,鴨高湯與黑啤泡泡互相輝映,堆疊出華麗的層次與口感,又一道美好如暖陽般的開胃小點完整呈現,已醉人的滋味,內心更為澎湃。

夏季黑松露與紅豆

以承載西班牙滿腔的熱情,為開味小點畫下完美的句點。以西班牙燉豆為發想,燉豆堪稱是西班牙四處可見的家常料理,亦是主廚其祖母所傳承下來的食譜,完整詮釋家傳的珍饌。選用含有豐富的蛋白質及纖維的養生的紅豆,洗淨後簡單泡水,放入壓力鍋中,將瀝乾且切成塊狀的紅蘿蔔、洋蔥、南瓜及辛香月桂葉、蒜苗、大蒜、薑及昆布依序加入鍋中,透過壓力鍋燉煮35分鐘,原汁原味濃縮下,匯聚了食材的香甜與鮮美,只取其湯汁過濾後再次濃縮燉煮30分鐘,濃郁香氣襲人,再加入帶點煙燻氣息的煙燻紅椒粉與醬油、鹽巴調味,上桌前撒上馥郁黑松露。主廚希望藉此道料理,以原始自然的食材帶出健康,濃郁交融的多層次滋味,以巧思結合出最熟悉的家鄉味的驚喜感受。搭配酒款:Bottega Soave Classico DOC 波特嘉經典蘇亞維白葡萄酒特色說明:明亮的麥稈金黃色澤,充斥著杏仁、蘋果、柑橘的誘人芳香,伴隨著和諧的礦物味、花香及鼠尾草氣息,入口優雅,帶有恰當的酸度,清新雅致令人愉悅,完美與開胃小點奏出一曲華麗的樂章。

前菜

獻給台北的沙拉 Salad in Taipei 鰹魚凝乳,苦瓜生菜汁.嫩葉生菜,漬小洋蔥

驚豔的擺盤顛覆對常規的視覺風格,從傳統的前菜沙拉脫胎換骨,優雅的色彩,繽紛而輕盈,栩栩動人下,使手中的刀叉停置不前,無法破壞眼前的美好。取一鍋水,放入細緻幼嫩且帶有淡淡燻香的鰹魚片、牛奶、鮮奶油及百里香,以滾水煮2分鐘過濾,放至容器內靜待冷卻取得凝乳並封蓋備用。苦瓜生菜汁,則是將清脆苦瓜洗淨,依序加入時令生菜A菜、醋、醋漬小洋蔥及水,放入調理機打碎,再取極細緻紗布過濾後於先放入盤中,上方依序放上翠綠生菜、海葡萄、A菜、小洋蔥、金桔、新嫩生菜等,佐以濃郁醇香鰹凝乳的妝點,絢爛多彩色調令心情愉悅,清新滋味使人著迷,敞開了心房,準備迎接緊接而來的動人饗宴。

台灣活龍蝦 發酵鳳梨醬汁,飛魚卵,水蓮,明蝦蛋黃醬

西班牙三面環海,擁有豐富海資源,主廚也特別喜愛海洋的平靜、安寧與美麗,對於海鮮食材也特別擅長與專研,其同名米其林一星餐廳只供應海鮮料理為主。此次,選用產量稀少的台灣野生活龍蝦,放入上下火100度蒸烤箱蒸烤2分鐘,取出後放入冷水中,呈現溏心的口感並鎖住鮮甜。為凸顯出大海的豐美滋味的發酵鳳梨醬汁,將甜椒、青椒、紫洋蔥、大蒜、墨西哥辣椒、鹹味漬鳳梨切成適當大小放入容器中,再依序加入水、泡菜醬、醋及鹽巴一同醃製30分鐘,再與煮熟蛋黃打成醬汁。濃郁明蝦蛋黃醬,蝦油部分選用明蝦加入葡萄籽油沸煮後再以小火滾煮10分鐘,冷卻後過濾冷藏保存,再取雞蛋、鹽巴及醋一起打勻,再緩緩拌入蝦油調製濃稠。以活龍蝦為主角,為了豐富菜色的多元層次,主廚Alejandro Serrano 運用2種不同醬汁使料理賦予新味,蝦蛋黃醬與漬鳳梨醬平衡整體豐味,新鮮飛魚卵、香菜苗、水蓮點綴下,柔軟了每一分感官,繁複巧思蘊藏層次,口中正揮舞不可思議的彈牙美味,著實令人著迷。蘆筍與兩種風味醬 Asparragus 2 Sauces新鮮蘆筍,蘆筍冰沙,新鮮番茄水,初榨橄欖油蛋黃醬

順應季節而烹,使食材顯現最大價值。在西式料理中,重視季節食材的取用,當季時令傳遞出大地帶來的鮮活生命力,美麗的擺盤中,嘗到蘆筍的鮮甜細膩、溫潤美乃滋及宜人的番茄水,最後伴隨沁涼蘆筍冰沙,初始風味在口中縈繞,驚人的清爽與自然成就出渾然天成的好味。選用蔬菜之王美名的綠蘆筍,除去外皮及尾梗,放入鍋中加入鹽巴及糖煮製,熟透後立即放入冰水冰鎮,並切段備用,急速冷卻使其展現細緻與爽脆。取鍋中的水煮蘆筍水、蘆筍邊角及鹽巴放入調理機打成蔬菜汁,再用細砂布過濾後放入冰箱製成冰磚。特選牛番茄利用多功能調理機打成粗碎,並放入過濾砂布吊掛靜置12小時以上,取番茄汁再加入醋與鹽調味後製成新鮮番茄水。雞蛋、初榨橄欖油、醋及鹽巴製成初榨橄欖油蛋黃醬。將蘆筍放入盤中上方放上蘆筍冰沙,伴隨著新鮮番茄水與蛋黃醬,如同優雅的美人蘊藏著難忘風韻,再妝點上接骨木花、漬櫻桃蘿蔔及蝦夷蔥,入口蘆筍冰沙作為恰如其分的收尾,起承轉合帶來視覺與味覺的華麗體驗。

熱情與柔情兼具主廚Alejandro Serrano料理帶有幾分率性風格,施展廚藝魔法下,料理更加繽紛多彩。先將大蒜切片與葡萄籽油放入鍋中煎至金黃,過濾後蒜油備用,再將煎至後的蒜片與高湯、米醋及清香的黃燈籠椒一同放入多功能料理機打成細緻絲滑,再加入棕梠糖調製成獨特Bilbaina 醬。選用油脂豐美進口的日本鰹魚,切成條狀,簡單快速炙烤,並保留生鮮甜美口感。底層選用風味獨特的歐芹加入葡萄籽油放入調理機打製過濾製成醬汁,依序放入炙烤鰹魚Bilbaina 醬,上方點綴歐芹美乃滋、紫色貝比生菜、歐芹香料油,層層堆疊起的美妙、注入醬汁的層次口感,即完成了絕美搭配,更保留一絲暖甜及一抹鮮甜尾韻。

日本A5和牛 Japanese Wagyu 炭烤紅甜椒,紅甜椒醬汁,根芹奶油

豐富多彩的飲食文化中,肉類堪稱另一重點美食,尤其喜愛用炭烤、燒烤技法來呈現西班牙人的熱情與奔放,一道灑脫豪放的主菜,引領食客探索、挑動著味蕾的非凡體驗。主廚選用日本宮崎A5和牛,油花細緻均勻的和牛以真空低溫烹調法(舒肥法sous vide)待中心溫度達50度取出,於出餐前微煎四面,精準火候控制帶出和牛本身香氣與鮮嫩,更顯迷人雅緻。配菜與醬汁更為講究,炭烤紅甜椒與紅甜椒醬汁,取甜椒抹滿橄欖油及鹽巴以200度大火烤15分鐘再翻面烘烤15分,再以真空密封袋密封靜置2小時後取出甜椒水,融入醬油、鹽、糖及胡椒調味,同時炭烤紅甜椒切條備用。取略帶青澀且奶味足的塊根芹菜,切塊後加入牛奶、鮮奶油、奶油以小火煮至熟透,簡單過濾後,將煮好塊根芹菜以多功能調理機打成泥狀,再以鹽巴及胡椒調味成就出濃郁根芹奶油泥。伴隨和牛一同上菜,多汁柔嫩的A5和牛讓原始的風味在舌尖綻放,優雅醬汁更烘托細緻肉質的美好,甜潤根芹奶油泥與甜椒和諧而豐富,多層次的變化共舞下,展現肉脂感的無盡魅力。

搭配酒款:Bottega Amarone DOCG 波特嘉阿曼羅內.紅葡萄酒

深藏鮮明且強烈的紅寶石光澤,甜潤李子風味轉換而帶出櫻桃、酸櫻桃與果乾香氣,同時帶點辛香氣息,濃郁芬芳,單寧更顯不可思議的細緻柔美。

甜點

Torrija ,手工香草冰淇淋

主廚將源自家鄉西班牙的傳統點心Torrijas讓饕客擁有最棒的甜蜜回憶。西班牙道地Torrijas是款略帶濕潤、散發奶油香氣,且外層糖脆的傳統點心。以中筋與高筋麵粉、冰奶油、糖、冰水及新鮮酵母,攪拌均勻後緩緩揉製成布里歐麵糰,並放入冰箱冷藏18小時,取出反覆摺疊製成交織出層次感,再放入180度烤箱烘烤50分鐘,取牛奶、重鮮奶油、檸檬皮、香草莢、肉桂及糖以小火滾煮10分鐘降溫後再加入蛋黃製成濃郁蛋黃醬,取麵包體切成合適大小浸泡於蛋黃醬12小時以上,最後表面撒糖以燃燒器將表面烙燒,金黃色的麵包甜點,嘗的到多種甜潤滋味,而一旁搭配的手工香草冰淇淋濃醇逐漸擴散,來自西班牙的甜蜜獻禮,為整套饗宴畫下完美。

Alejandro Serrano (亞歷山卓․塞拉諾) 主廚介紹

現年26歲的Alejandro Serrano(亞歷山卓․塞拉諾) 出生於西班牙埃布羅河畔米蘭達,家族以經營餐廳為主,在餐飲世家中,意識到對美食的熱情,並就此立下有朝一日成為主廚的志願。先後在三星主廚-安尼柯艾夏(Eneko Atxa) 的Azurmendi餐廳及大衛·穆諾茲(Dabiz Muñoz)的DiverXo餐廳習藝,憑著對料理豐沛的創意與熱情,使得Alejandro Serrano成為西班牙最亮眼的閃耀之星。料理特色以風味(flavour)、感官(feeling)、美學(aesthetics)為核心,年輕、富有創造力。Alejandro Serrano非常擅長海鮮料理,此外善用融合創新與傳統貫穿的手法,巧妙融合海味與山珍,充份展現食藝美學,幻化出道道令人愉悅與激賞的盛宴,為饕客獻上無法忘懷的美味旅程。2019開設了一家屬於自己的同名餐廳Alejandro Serrano Restaurant, 2021年才24歲的Alejandro Serrano就獲得米其林美食指南一顆星的肯定,為目前西班牙史上最年輕的米其林星廚,2022年更上一層樓,榮獲西班牙雷普索爾(Repsol)的太陽美食評鑑一顆太陽的殊榮,更入選富比士雜誌歐洲版(Under 30 Europe)30歲以下年輕領袖傑出青年。

雷普索爾(Repsol)是世界最具代表性的石油企業之一,更致力於西班牙、葡萄牙的旅遊、美食發展,每年由西班牙皇家美食學院的好友協會(The Association of Friends of the Spanish Royal Academy of Gastronomy)和美食公會(Good Food Guild)所挑選出傑出的餐廳頒予雷普索爾(Repsol Guide)的太陽評鑑,評分項目包含了卓越的烹飪技術、食材的品質及對於在地料理的尊重與應用、葡萄酒選單,當然也包括了餐廳的服務。雷普索爾(Repsol Guide)的美食指南出版於1979年,至今已超過40年的歷史,評選出超過五百家餐廳頒予一至三顆太陽,其公正與專業性,對於當地的餐廳與廚師們而言,是最高聲望及榮譽的獎項,象徵著廚藝的卓越與精湛,對於美食饕客與旅客的影響力相當於法國的米其林評鑑。
