深耕台灣餐飲界二十多年的麥可溫德,如今積極擴展與經營自我品牌,2018德國啤酒節將首次帶來新的元素,與現今美僑餐飲協理董瑞福兩個德國人皆俱備三代烘焙、餐飲世家,整合兩強六代雄厚的餐飲背景與啤酒節經驗。兩個德國人再次相會格外相惜,南北的交集,在充滿東西文化匯集的美僑舉辦,促成這次『南北遇見東西』所激盪的啤酒節花火。雙廚出任務,近日也積極研討試作菜色,各自帶來南北德的特色菜,就是要呈現最美味又瘋狂的啤酒節精神,麥可表示:「很開心能跟老朋友在新場地舉辦啤酒節,我們德國人不但工作認真,喝起啤酒也絕不遜色,兩個德國總廚合作,一定更加賣力『厚搭啦』!」

巴伐利亞特快車 啤酒節與你尬車

狂歡派對最重要的燃點就是樂團了!為了給賓客最棒的啤酒節體驗,麥可溫德從慕尼黑重金禮聘,把曾在法國、巴西、荷蘭甚至是美國等啤酒節演出的專業樂團─巴伐利亞特快車(Bavaria Show Express)請來台北。特地將德國稀有的阿爾卑斯山長號角(Long Alphorn)

搬來台灣,長得像巨大煙斗、長達三米的長號角,源於古羅馬時期,牧羊人們在阿爾卑斯山間互相聯繫的工具,聲音低沉卻宏亮。當樂團主唱Martin Scheuber吹響長號角,也代表十一天的慶典開始引爆!今年,台北市美僑協會將可容納三四百人的大型宴會廳,搖身一變變成啤酒節帳篷,現場吊飾擺設皆與巴伐利亞傳統藍白格紋相互呼應,不時還有穿著德國傳統服飾的服務生穿梭招呼。每到啤酒節期間,人人大口吃肉,舉杯狂歡,還可見男男女女全數穿著巴伐利亞的性感洋裝Dirndl或帥氣的傳統吊帶皮褲Lederhosen,在樂團的帶動與震耳欲聾的音樂下,人人手勾著手大跳「小雞舞」,不用出國就能跟隨音樂歡呼大跳,徹底感受「High到掀屋頂」、豪邁奔放的德意志精神!

暖身操活動與開幕夜

201809140004 (5)首次與美僑協會合作的麥可溫德,也帶來啤酒節活動暖身操,9月22日周六下午1:30舉辦「德國啤酒節─強強滾大賽」,參賽者必須在賽道將啤酒桶滾到指定地點,並吃完一整根德國大香腸才算完成,預計現場緊張又熱鬧的氣氛將HIGH到最高點!此活動可預先或現場報名;針對親子家庭,9月29日和10月6日下午也貼心準備「兒童薑餅彩繪活動」,麥可叔叔將帶領小朋友們,用各色糖霜在啤酒節愛心薑餅寫下名字或祝福的話,不但好吃好玩,更是啤酒節不可或缺的妝點元素。

開幕日周五當晚9月28日晚間7:00,將邀請德國在台協會新任會長Dr. Thomas Prinz與麥可溫德Michael Wendel、美僑協會美籍總經理Mr. Todd Bretzlaff、德籍餐飲協理Ralf Dohmeier及與會貴賓一同遵循傳統,手持木槌敲進大啤酒圓桶,並齊聲高喊「O’zapft is!-開酒啦」,象徵多方合作的德國啤酒節正式展開序幕!一系列精彩活動完全展現德意志純粹與美式兼容並蓄的精神,也邀請台灣的朋友指定『麥可溫德』所舉辦的最好玩啤酒節,一同共襄盛舉、暢飲無敵!

雙廚出任務 南德北德派對餐

201809140004 (3)德國的派對-肉食主義、無肉不歡! 來自德國南部的麥可北部的瑞福,近日也積極研討試作菜色,各自帶來南德與北德的招牌特色菜,麥可分析說:「德國南部的麵包小麥粉使用較多,所以南方麵包會比北部麵包顏色較淡,配菜像是酸菜或醃黃瓜調味也稍甜與柔和,就跟我一樣可愛!德國北部口味就比較濃、鹹、香,就像瑞福一樣,存在感十足!」

(南方菜) 慕尼黑香酥豬排 Schnitzel“Münchner Style” NT$455

來到慕尼黑你會發現除了豬腳,豬排(Schnitzel)也是大街小巷都有的扛霸子!豬里肌片薄,抹上辣根、黃芥末與秘密配方的調醬,再裹上麵粉、蛋液、麵包粉麵衣,入奶油鍋中半煎半炸得香香酥酥,配上薯條,就是慕尼黑道地吃法。

(南方菜)啤酒節烤風味鯖魚Oktoberfest Grilled Mackerel NT$580

慕尼黑啤酒節當地竟然有一個只賣烤魚料理的Fischer Vroni Tent大帳篷,裊裊炭火慢烤一支支豎立Steckerlfisch烤魚也成為啤酒節獨特的風情之一。這個帳篷主人Hant正巧是麥克與瑞福的共同好友,一聽到他們要在台北舉辦啤酒節,特別不藏私的將獨家烤魚配方分享給兩位好友。耗費工夫的日耳曼烤魚,將新鮮的長鯖魚填入百里香、蒔蘿、香菜、新鮮迷迭香與鼠尾草,擠上黃檸檬汁慢烤,外皮酥脆,同時保留鮮魚的水分,巧妙掌控火候技巧是大學問!

經典咖哩腸佐薯條 Traditional Currywurst with Pommes NT$200

咖哩香腸是德國最受歡的小吃,人們在街邊的速食亭買上一份品嘗就是德國的日常風光。每家都有獨特的秘製配方,瑞福Ralf特地將爺爺Grand Father Karl Alexander Obermeyer 1965年所傳下來的秘製咖哩茄汁醬搬出檯面,搭配現炸的粗脆薯沾附醬汁一起吃,瑞福拍胸部保證絕對在別處吃不到相同滋味!

經典烤豬肉串佐薯條 Traditional Shashlik with Pommes NT$200

董瑞福談起烤豬肉串眼中帶有溫柔,他說這是他媽媽最喜歡的一道菜,也是他從小吃到大的德式家常風味。把醃過的豬頸肉放入高湯燙過,豪邁切成大塊肉丁與洋蔥交錯串在肉串上,煎到焦香,抹上大量番茄紅椒為基底的酸甜醬汁,送入烤箱悶烤入味,同樣搭配薯條再淋上更多醬汁,這是德國媽媽兼顧營養與美味的智慧。

 德式傳統烤豬腳Haxen NT$560

聞名世界的德國豬腳大致分為水煮及火烤兩種,水煮豬腳以北部最著名,而南部則是以烤的居多。烤豬腳擁有二千多年歷史,以北萊茵威斯特法倫州的科隆古城最為聞名!今年啤酒節精選進口的豬前腱肉,以白酒及香料醃製入味後,把豬腳與香草、洋蔥、月桂葉、蔬菜等一同入鍋水煮兩小時,再以高溫185度烘烤45分鐘,烤到內層膠質融化、外層皮酥香脆,建議把豬腳的脆皮與肉分開吃,享受兩種衝突又美味的肉食嚼感。麥可還建議,每個美女來啤酒節一定要吃烤豬腳配啤酒,因為豬腳有超多天然的膠原蛋白,吃完明天會更漂亮!

搭配在烤豬腳旁的是德國家鄉酸菜,以培根、洋蔥、杜松子、白酒醋調味炒過,爽口去膩;特別選用台灣屏東的馬鈴薯來做洋芋泥,由於澱粉含量高,高溫搗碎後加入牛奶和鮮奶油更容易吸收入味,灑上現磨肉豆蔻和海鹽,攪拌到綿密滑順但仍吃得到馬鈴薯顆粒口感。

每個德國人心中都保有給『香腸』的一席之地。麥可還說,有一句家喻戶曉的俗諺:「萬事有個頭,香腸有兩頭Alles hat ein Ende, nur die Wurst hat zwei,代表香腸在德國不只是美食,還具有深入生活且深植人心的地位。」

德式香腸綜合盤The Sausage Platter NT$515一次可吃到四種香腸,包含圖林根圈腸、原味與煙燻法蘭克福腸以及豬肉腸。圖林根香腸源自於德國圖林根(Thüringen),這款香腸可是有德國食品法規範,只有百分之五十一的材料來自德國圖林根地區才能號稱此香腸!它的特色在於含脂量較低,肉販會灌的較長來增加穩固性但卻也不方便呈裝,因此把香腸捲成像鍋牛的形狀,還加入茴香、墨角蘭與大蒜調味,還有人稱它為小蝸牛香腸呢。世界知名的熱狗(Hot Dog)其實就是「法蘭克福腸 Frankfurter,使用純豬肉,加入匈牙利紅椒粉調味,以原味和核桃木自家煙燻,表現不同香氣口感。大快朵頤香腸盤前,也別忘了配上德國酸菜與馬鈴薯泥一起享用,多層次的口感,融合香料與費時熬煮的牛肉洋蔥肉汁,也難怪是啤酒節最受歡迎的佳餚之一!

野莓弗洛瑪佐香草醬Red Grit with Vanilla Sauce NT$210                                             

這道清爽、無負擔的甜點是德國夏日經典甜點。取用當季新鮮野莓做成慕斯,搭配上主廚特選的香草莢熬煮製成的香草醬;野莓慕斯偏酸的口感再配上香草的香甜濃郁,是啤酒節戀愛的滋味。

皇家蘭姆鬆糕 Emperors’ Delight NT$310

歐洲許多名菜都是由於受皇室喜愛而留傳至今,這道皇家鬆糕也不例外。看似貌不驚人的甜點,在吃過一口後絕對會讓你對它刮目相看。在奧匈帝國時期,奧地利皇帝佛朗莿.約瑟夫一世對於這道甜點,一開始不抱任何期待,結果嚐了一口後,便把皇后的那一份也吃了!主廚特地選用牙買加濃郁、味辛且醇厚的黑蘭姆酒去蜜漬葡萄乾,再拌入鬆糕糊,熱鍋倒入麵糊就不能停手,讓麵糊蓬發上色,再切成小塊與糖粉一起拌炒至焦糖化,以煎、炒、烤慢火加熱,為了不讓麵糊在炒的過程塌陷,巧勁和耐心是關鍵。外酥內卻蓬鬆的鬆糕,嘗得到淡淡酒香與焦糖香氣,為這道甜點增添一股歐式成熟的韻味。

德國人喝啤酒

201809140004 (6)德國人喝啤酒時總會等到同桌的夥伴都拿到啤酒時才開飲,首先他們會拿起大啤酒杯大喊一聲「Prost!(類似英文的Cheers之意)並互撞酒杯後才喝第一口,或是有些人會對好朋友說「Aud Ex und Hop!」(台灣乾杯飲盡之意)。今年的德國啤酒節,選用Erdinger艾丁格啤酒,他們遵循1516年德國巴伐利亞正統釀酒工法,僅使用麥芽、啤酒花、新鮮酵母、水,四大天然原料進行啤酒精釀,不添加其他香料及副原料,成就出高品質的啤酒。別於一般市售主流大麥釀造啤酒,艾丁格啤酒添加高比例、高度營養價值的「小麥」做為原料,採「瓶中二次發酵工法」 -於裝瓶前再次添加新鮮酵母,於瓶中持續發酵,因此喝起來擁有較高的二氧化碳含量,深受年輕族群喜愛,也是目前世界上仍堅持同時使用兩種發酵法的少數啤酒品牌!

「艾丁格純麥啤酒Erdinger Weißbier是一款具有巴伐利亞鄉村性格的啤酒,具氣泡感入口綿滑,尾韻清爽帶些許柑橘與丁香味,適宜搭配沙拉、德式炸豬排、雞肉、魚等,非常適合當作第一杯起跑飲用。

「艾丁格黑啤酒Erdinger Dunkel是少見的小麥黑啤酒,結合小麥啤酒獨特的焦糖香氣與黑啤濃郁甘醇的口感,建議搭配德國豬腳或肉食最為對味。

「單車騎士啤酒 Radler Beer這是一種啤酒和雪碧以2:1比例,藉由啤酒的甘醇和汽水的香甜所混合出的啤酒調酒,喝起來格外順口,適合喜歡清爽微甜的人飲用。此啤酒由來,據說在一個炎熱夏天午后Franz Xaver Kugler在巴伐利亞擁有一個山嶺地,當天突然沒有足夠的啤酒供應給騎自行車或登山客,靈光乍現混合啤酒和檸檬汽水做成一款新式啤酒,卻因此大受歡迎!而他也叫這種特別調酒為- Radler騎士啤酒。
