近幾年西餐不斷在「台味化」著墨,用法式傳統料理手法,巧妙融入台灣既有的在地文化、食材甚至是生活習慣,本季國賓飯店西餐行政總主廚凌維廉,將台灣當地的食材及飲食文化習慣結合,用分子料理重組食材的技藝解構台灣味,一絲一絲抽出台灣人記憶中熟悉的味道,再一層一層鋪蓋到西式餐點上,這些料理骨子裡保有西式料理的精神,卻披上台味的外皮。例如虎蝦的調味則用台灣人在味覺上很熟悉不過的「蒜蓉鮮蝦」為底調;一般常見的凱薩沙拉融入經典的台式古早味「白菜滷」元素;爐烤鱈魚則拆解了台灣街坊巷弄餐館中常見的「豆酥鱈魚」的味道;從台北到高雄各地都有代表名店的「麻辣鍋」則將味型、鍋底及火鍋料都在鴨胸中精采呈現,9月23日起推出全新菜色。

虎蝦」經過香煎的虎蝦肉質飽滿緊實且香氣四溢,台味十足的蒜蓉鮮蝦的醬汁搭配得恰到好處,經過酥炸的冬粉增添酥脆口感,清炒水蓮的口感則清甜爽脆。「凱薩沙拉」以台式小吃「白菜滷」為發想,將豬皮烘乾油炸成酥脆口感,取代麵包丁,放上蘋果絲瓜、蘆筍及起司薄片,讓經典沙拉帶有台菜的靈魂。「鴨胸」以台式「薑母鴨」為靈感,香煎後的鴨胸鮮嫩紮實,微微麻辣濃香的醬汁格外誘人,佐以麻辣湯底的元素,搭配口感紮實而綿密的自製板豆腐,以及形似米血糕的香脆黑米餅,一口咬下香腴鴨肉與其豐厚脂肪在口中化開融合,焦脆的鴨皮帶出新的口感,粉紅色的鴨肉則軟幼嫩口。「爐烤鱈魚」台灣人非常喜愛的豆酥鱈魚,取出豆酥元素,製成薄片放在澳洲鱈魚一起爐烤,搭佐的茴香奶油醬汁香料味濃厚,與豆酥呼應出更深沉的豆香,而醃漬黃瓜則增添另一層次的爽脆滋味。

201909230002 (3)炙燒鮪魚」鮪魚的炙燒香氣、蛤蜊的濃郁鮮香及紫蘇油的清爽開胃相互激盪出難以形容的夢幻美味,而辣味芥末醬突出的味道則讓整道菜的風味更上一層。「鵝肝」肥潤的鵝肝與烤到酥脆的布里歐麵包是天生絕配,大黃根特有的酸度恰巧平衡鴨肝的油脂,莓果香氣及文旦柚點綴出清爽解膩滋味,開心果碎的脆口也增添多層次口感,整體風味融合酸、甜、清爽,在舌尖產生一股多滋多味的餘韻。「魚子醬蒸蛋」在口感細緻的蒸蛋上鋪上厚厚一層來自義大利北部Beluga頂級魚子醬,甘鹹海味在蛋液與清爽柴魚的淡淡鮮甜襯托下更顯突出。「藍龍蝦」藍龍蝦的主要產地位於法國布列塔尼,平均200萬隻普通龍蝦中才會出現一隻,數量相當稀少,搭配帶有濃濃海洋風味的龍蝦精華美乃滋,中式料理中常用的鳳眼果搭配入菜則意外的協調,彷彿一場舌尖上的極致的海味交響樂。配菜部分則新增香氣四溢而多汁的「烤蒜味奶油蘑菇」及脆口中帶著馥郁奶香及香料氣息的「爐烤香料白花菜」兩款,讓顧客能夠搭配主餐享用。

201909230002 (5)本季的舒芙蕾換成花生口味,「花生舒芙蕾」選用新鮮花生烘烤出堅果香氣,再細火掛霜增添焦糖風味,不摻一滴水研磨成濃醇花生醬,香氣完美融入舒芙蕾中。「蜜桃烏龍慕斯」將自帶夢幻粉色的紅寶石巧克力,包裹茶香滿溢的烏龍茶慕斯,並藏有新鮮白桃果餡,茶香與果香在口中激盪交融,回甘茶香讓人回味。「多香果巧克力」產自中南美洲地區的牙買加胡椒,因具有丁香、肉桂、胡椒等多重香氣,因此被稱為多香果,將現磨多香果混入以70%法芙娜巧克力製作的絲滑甘納許,可可芬芳相互纏繞,威廉洋梨雪酪的清爽花果香,點綴一絲涼意。「野莓白乳酪」選用法國百年品牌CACAO BARRY的58%巧克力製作圓形球體,以新鮮莓類與紫蘇酒製作野莓醬,滾燙澆淋在巧克力球上,悄悄消融的同時,隱身許久的驚喜也緩緩登場,唇舌間幽微的酸香芬芳,搭佐略帶鹹味的焦糖鹽之花冰淇淋,層次十分豐富。

詳細菜色介紹

虎蝦 NT$800

這季虎蝦以蒜蓉鮮蝦醬為基底,再搭佐炸冬粉、水蓮。水蓮經過蝦的提味總是能完整的釋放鮮甜,先把薑末、蒜碎及蔥碎炒香後,再加入蝦頭及殼炒香,再把大白菜替換成蕃茄丁,與蕃茄糊略炒後,再放入白酒、醬油、柚子汁煨煮。經過香煎的虎蝦肉質飽滿緊實且香氣四溢,與帶有蝦醬香氣的醬汁基底完美融合,經過酥炸的冬粉增添酥脆口感,清炒水蓮的口感則清甜爽脆,妝點得恰到好處,層次十分豐富,入口時有著無限驚喜。

 炙燒 鮪魚 NT$500

鮪魚取中段簡單醃漬後,搭配柚子油醋、日本家庭中常用的薄鹽醬油、柚子醬汁、薑末、芝麻油、迪戎芥末醬、去籽紅辣椒製成的辣味芥末醬。鮪魚肉質鮮嫩搭配蛤蜊湯凍及紫蘇油更能提升鮮味,蛤蜊湯凍選用新鮮活蛤與氣泡酒、月桂葉及薑絲蒸製出100%蛤蜊精華湯汁,與各式香料煮滾後製成鹹鮮味十足的湯凍。鮪魚炙燒後清爽不膩口,蛤蜊醬帶出的海味精華無比鮮甜,以綠紫蘇葉、菠菜葉及薑末、葡萄籽製成的紫蘇油帶有一股清新,而柚子油醋酸香滋味,兩者的清爽滋味恰巧平衡了入口後鮪魚因為口中溫度慢慢釋出的油脂,瞬間鮪魚的炙燒香氣、蛤蜊的濃郁鮮香及紫蘇油的清爽開胃相互激盪出難以形容的夢幻美味,而辣味芥末醬突出的味道則讓整道菜的風味更上一層,而炙燒過的鮪魚氣息讓人唇齒格外留香。

 鵝肝 NT$800

選用口感滑嫩、油脂豐富的匈牙利鵝肝,煎至外皮焦香後,大黃根野莓醬、蘿勒油、開心果、文旦柚一起享用,秋季特有的食材搭配,令人滿足得回味再三。肥潤的鵝肝與烤到酥脆的布里歐麵包是天生絕配,鋪上偏酸的大黃根野莓醬,最上層再放上檸檬蘿勒泡泡。大黃根特有的酸度恰巧平衡鴨肝的油脂,莓果香氣及文旦柚點綴出清爽解膩滋味,開心果碎的脆口也增添多層次口感,整體風味融合酸、甜、清爽,在舌尖產生一股多滋多味的餘韻。

 凱薩沙拉 NT$400

這季的沙拉調味是以台式小吃「白菜滷」為發想,關鍵食材豬皮也巧妙的運用在沙拉中。將蘿蔓生菜、甜度極高的蘋果絲瓜及美國蘆筍都片成薄片,搭配香氣厚實、口感滑順的凱薩醬令人著迷。將豬皮上多餘的脂肪去除,入鍋煮至豬皮軟而不爛,烘乾至完全乾燥後油炸成酥脆口感,取代原有的麵包丁。上桌前將沛戈里諾羊乳酪起司在鐵板上刷熱,取鏟子刮下半融乳酪置於盤中,色彩繽紛的季節時蔬搭配鹹甜交織的醬料,豬皮香脆口感,台灣本土食材及西式經典沙拉的完美搭配,挑起對美食渴望的味蕾。

魚子醬蒸蛋 NT$800

選用來自義大利北部的Beluga頂級魚子醬,遵循傳統方式育養純種俄羅斯鱘魚,圓潤、飽滿、滑溜、色澤清透又明亮。蒸蛋的口感十分細緻,表面光滑如鏡面,入口如同布丁般軟嫩,所有的關鍵就在溫度的控制,將蛋打散後拌入柴魚湯汁,再倒入蛋殼中,經過濾網過篩的步驟才能成就如鏡面般光滑的表面,用90度蒸製七分鐘,由於溫度的細微變化都會影響蛋的熟度,所以掌握蒸製時間特別重要,為了讓蒸蛋沒有孔洞,所有的動作都要輕而慢,避免激起太大的氣泡,取出時輕輕搖晃,讓蛋液凝固慢慢即可,最後放上極高品質的頂級魚子醬。魚子醬的甘鹹海味在蛋液與清爽柴魚的淡淡鮮甜襯托下更顯突出,而蒸蛋極度輕盈婉約的姿態則挑逗了味蕾。

鴨胸 NT$900

選用生長在秀姑巒溪的櫻花鴨,水質優良且環境優美,讓鴨隻可在天然的環境中生長,且戲水有益櫻花鴨增加肌肉強度,提升口感。此次將櫻花鴨胸風味更為濃縮,經過七日的乾式熟成,讓肉質與味道更為幼嫩豐郁,且櫻花鴨肥瘦均勻、皮薄肉豐。這季以台式「薑母鴨」為靈感,並佐以麻辣湯底的元素,首先用麻油慢煸老薑,放入鴨肉將皮煎上色加入米酒用大火把酒精燒至揮發,把湯汁濃縮至一半後加入蔬菜料及甘草略炒,同時取另一鍋放入辛香料與蔥白、豆瓣醬、乾花椒、乾辣椒及草果炒香並將香氣完全釋放,再倒入鴨肉湯底中一同燉煮成香料鴨汁。吃麻辣鍋時必吃的配菜,行政主廚也選擇用化學作用自製口感紮實而綿密板豆腐,蛋殼洗淨煮沸晾乾,放入密封罐以白醋醃漬四天製成醋酸鈣水,黃豆煮滾打至綿密細緻,過濾掉豆渣做成豆漿,慢慢倒入醋酸鈣水攪拌,靜置後呈豆花狀,放到檜木豆腐模具中用重物壓置除去多餘水份,讓豆花凝固成緊實的板豆腐狀。而用黑米、黑胡椒及竹炭粉製成的香脆黑米餅,靈感也是來自於也是麻辣鍋必備的米血糕。香煎後的鴨胸鮮嫩紮實,微微麻辣濃香的醬汁格外誘人,一口咬下香腴鴨肉與其豐厚脂肪在口中化開融合,板豆腐扎實的口感搭配得恰到好處,脆口的黑米餅增添豐富層次,反而有畫龍點睛之美,醬汁厚醇香甜、滋味鮮美,焦脆的鴨皮帶出新的口感,粉紅色的鴨肉則軟幼嫩口,整體香氣逼人且嚐之回味無窮。

爐烤鱈魚 NT$1200

在台灣許多餐廳常見到豆酥鱈魚這道菜色,嚴格來說這是道台式川菜,「豆」是指用了發酵黃豆,「酥」則是指把剁碎的黃豆炒酥。嚴選來自澳洲的鱈魚,用澄清奶油將辣豆瓣醬及辣椒碎以小火炒香,過濾後用熱油浸泡豆酥後,將香草磨成粉調味,再把豆酥壓製成薄片,出餐時放置在煎過的鱈魚上烤,鱈魚經過高溫釋放出油脂恰巧與豆酥薄片結合,而白胡椒粒、香菜籽、百里香、甜菜頭及蒜粉等香料研磨成粉後調味,反而提升了較沉的豆酥香氣。另外搭佐的茴香奶油醬汁,以干蔥、磨菇、茴香頭、茴香籽等食材加入魚湯、白酒燉煮濃縮湯汁,匯集精華後放入打發鮮奶油及茴香葉,醬汁中使用了三款酒類,包括苦艾酒、茴香利口酒及白酒,與茴香激盪出香氣馥郁的一股清新滋味,與豆酥呼應出更深沉的豆香,而醃漬黃瓜則增添另一層次的爽脆滋味。

藍龍蝦的主要產地位於法國布列塔尼,當地平均海水溫度為22度左右,非常適合各類海洋生物繁殖與生存,從這裡出產的海產等同於品質保證,是知名的高級海鮮產區。藍龍蝦數量相當稀少,平均200萬隻普通龍蝦中才會出現一隻,因此身價極高。一般龍蝦的肉質可能會因年齡大而少了鮮嫩感,但藍龍蝦的肉質卻不受年齡影響,不管生長了多久或體型大小,厚實的龍蝦肉都能保持彈性的口感,以氮氣冷凍方式,將龍蝦原汁原味的保留再空運來台,味道依舊濃郁又兼具清爽與鮮甜。用奶油炒香干蔥、蒜碎及藍龍蝦塊,再加入法式傳統龍蝦料理中的必要元素干邑白蘭地、各式香料、蕃茄、乾花椒及雞湯等,用清爽的元素盡量凸顯藍龍蝦的鮮甜。鳳眼果口感近似板栗,微甜而香氣足,在廣東常用於煲湯或悶燒肉類,而這次的醬料則搭配鳳眼果起司泥,鳳眼果煮熟後剝去黑色外皮及淡褐色半透明中間皮,取最內部乳白色質軟的果仁,蒸熟後加入百里香後壓成泥狀,加入帶有微微的甜味與新鮮的奶香、口感濃郁滑順的義大利馬斯卡彭乳酪,並一起打發成綿密泥狀。布列塔尼的水域具有多種海洋微量元素,龍蝦在生長過程中所吸收的海洋元素精華堆積在體內,取出蝦膏的部分,與蛋黃、迪戎芥茉醬、葡萄籽油及干邑白蘭地均勻攪拌後,製成帶有濃濃海洋風味的美乃滋,搭配肉厚鮮嫩的藍龍蝦格外鮮爽宜人,匯集海洋精華的原味於盤中,中式料理中常用的鳳眼果搭配入菜則意外的協調,彷彿一場舌尖上的極致的海味交響樂。

配菜-烤蒜味奶油蘑菇 NT$280

蘑菇及香菇、奶油及蒜碎的搭配,總是格外合拍而美味,撒上巴薩米克醋及新鮮百里香碎後,捻上些許的黑胡椒及鹽,烤20分鐘,完整保留其多汁的水份。香料氣清新氣息與蘑菇烘烤出的水份完美融合,奶油水將湯汁緊緊吸附在蘑菇上,巴薩米克醋鮮甜而後韻微嗆酸的濃郁滋味,勾勒出輕薄不厚重卻具有深度的奶油香醇。

配菜-爐烤香料白花菜 NT$220

當季的白花椰菜特別甜美,取下白花的部份汆燙。白花菜梗的部分則打碎製成白花泥,主要是用奶油將干蔥炒軟後,加入月桂葉、百里香、巴西里及碎白花梗、鮮奶油煮至軟化,再放進辣根醬、咖哩粉攪拌打至細緻。再將白花泥與白花菜拌勻,以現磨豆蔻粉點綴,放入鑄鐵鍋灑上起士絲烤上色。白花菜外表被黃黃一層起司覆蓋,脆口中帶著馥郁奶香,而突出的咖哩香料味則增添一股清寡鮮美,白花菜的生菜味被帕瑪森的溫潤乳香馴服,搭配厚重的主食享用格外爽口。

花生舒芙蕾 NT$400

新鮮花生烘烤出堅果香氣,再細火掛霜增添焦糖風味,不摻一滴水研磨成濃醇花生醬,香氣完美融入舒芙蕾中,如同其法文原意「蓬鬆地脹起來」,有著稍縱即逝、若有似無的空氣口感。突破傳統法式框架,研發屬於台灣人的花生口味,搭配它的「最佳拍檔」法芙娜70%黑巧克力醬,濃醇滑順讓整體香氣更提升,可享受「甜點二吃」的體驗。搭佐清爽的柑桔雪酪,為厚實甜蜜中帶來一抹清新。

蜜桃烏龍慕斯 NT$400

今年六月才引進台灣的「世界第四種巧克力」-紅寶石巧克力,A CUT在全新菜單中搶先使用!自帶夢幻粉色,主廚保留紅寶石可可的天然莓果香氣,搭配加州白桃讓風味更加乘。粉嫩外殼下包裹著茶香滿溢的烏龍茶慕斯,並藏有新鮮白桃果餡,茶香與果香在口中激盪、交融,最終達到平衡,記憶點十足。透光晶凍下是來自法國的馬斯卡邦乳酪,交織起覆盆子果泥的酸香甜蜜。搭佐以百分百楓糖製作的冰淇淋與荔枝泡泡,有著蛋白霜的空靈輕盈、棉花糖的柔軟,同時又帶有果凍的Q彈,新奇食感令人印象深刻。

多香果巧克力 NT$400

胡椒也能入甜點?產自中南美洲地區的牙買加胡椒,又稱多香果,因具有丁香、肉桂、胡椒等複合香氣,因此得名。將現磨多香果混入以法芙娜70%巧克力製作的絲滑甘納許,是主廚經過不斷嘗試才找到風味、香氣皆能匹配的一款巧克力,同時使用在鋪底的金融家蛋糕中。溫和又個性十足的香料氣息,與可可芬芳互相纏繞,威廉洋梨雪酪的清爽花果香,點綴一絲涼意。金桔醬的濃嗆酸度在焦糖的中和下轉為溫順,頂端妝點極富視覺效果的蜂巢糖,增添甜蜜。

野莓白乳酪 NT$400

選用法國百年品牌CACAO BARRY 的58%巧克力製作圓形球體,內餡被包覆的嚴實也勾引起好奇心。以新鮮草莓、覆盆子與帶點草本氣息的紫蘇酒製作野莓醬,滾燙澆淋在巧克力球上,悄悄消融的同時,隱身許久的驚喜也緩緩登場。來自法國的頂級伊斯尼乳酪,乳脂風味圓潤飽滿且口感滑順細緻,搭配自製野莓醬的酸甜風味,味蕾瞬間甦醒。唇舌間幽微的柑橘芬芳,來自香氣細膩的黃檸檬蛋糕,搭佐略帶鹹味的自製焦糖鹽之花冰淇淋,整體層次豐富,視覺效果十足。
